For a book with different authors for the chapters

Author, A. A., & Author, B. B. (Year of publication). Title of chapter. In A. A. Editor & B. B. Editor (Eds.), Title of book (pages of chapter). Publisher.

Note: When you list the pages of the chapter or essay in parentheses after the book title, use "pp." before the numbers: (pp. 1-21).List any edition number in the same set of parentheses as the page numbers, separated by a comma: (2nd ed., pp.66-72).

 

So your example would read:

Ayvazian, A. & Tatum, B. D. (2013). Women, Race, and Racism. In M. Adams, W. J. Blumenfeld, R. Castaneda, H. W. Hackman, M. L. Peters, & X. Zuniga (eds.), Readings for diversity and social justice (pp.127-133). Routledge.

And for in-text: use the chapter author(s) and date. In your case (Ayvazian & Tatum, 2013)
