Q. What is the difference between "Assignments" and "Individual Assignments"

There's really no difference, they are just names for the assignment groups. When courses are migrated over from Moodle assingments get clumped together under an assingment group based on how they were set up in Moodle. The assignment groups are for your own organiztion. They come in particularly handy if you want to created different grading weights for different types of assignments.

You can delete assingment groups that you're not using or rename them to better reflect how they are grouped together.
