You are referring to a secondary source (Smith) that you did read, citing an original source (Jones) that you did not read. In text, you would refer to the original source, then add (as cited in ___, date) like so:

Jones posits (as cited in Smith, 2009) that....

In your reference list you only need to cite the secondary source (Smith).
